How to use the rice cooker water ratio calculator

Most rice failures come down to one of three things: using the wrong cup, using a stovetop ratio in a sealed cooker, or treating every grain the same. The calculator handles all three.

  1. Choose your rice. Jasmine, basmati and short-grain sushi rice all behave differently — basmati wants about 20% more water than jasmine at the same volume.
  2. Set the amount and the unit. If you're using the plastic cup that came with your cooker, that's a rice cooker cup (180 ml), not a US cup. This is the single most common mistake.
  3. Fine-tune. Rinsed rice carries water into the pot and needs slightly less added. Soaked rice needs less again. Pressure cookers need far less than a standard rice cooker because nothing evaporates.

A rice cooker cup is 180 ml, not a measuring cup

The plastic cup packed with almost every rice cooker holds 180 ml. It's the Japanese , a traditional unit that predates the machine, and it weighs roughly 150 g of raw white rice. A US measuring cup is 236.6 ml and a metric cup is 250 ml — between 31% and 39% larger.

This matters because the water lines printed inside the pot are calibrated to that 180 ml cup. Measure three US cups of rice, fill to the line marked "3", and you have poured in about 30% too little water for the amount of rice in the pot. The result is hard, chalky grains at the bottom and a puzzled cook. If you have lost the plastic cup, measure ¾ of a US cup for each rice cooker cup, or weigh 150 g.

Does rinsing change the water ratio?

Yes, in two ways. Rinsing washes off loose surface starch, which is what makes rice gluey and causes the foaming that pushes starchy water out of the vent. It also leaves water clinging to and inside the grains — around 10% of their weight — so rinsed rice needs slightly less added water than dry rice from the bag.

Rinse until the water runs mostly clear, usually three or four changes, then drain properly in a sieve for a minute. Skipping the drain is what turns a good ratio into a wet one. Soaking goes further: 30 minutes of soaking lets the grain hydrate evenly before heat hits it, giving a more uniform texture, and it cuts the added water by roughly 10–12%. Basmati and brown rice benefit most.

Two exceptions. Don't rinse rice sold as enriched or fortified in the United States — the vitamin coating washes straight down the drain. And don't rinse arborio or other risotto rice, where the surface starch is the whole point.

Brown rice in a rice cooker

Brown rice keeps its bran layer, which resists water and slows everything down. Plan on double the water and roughly twice the cooking time. On a basic on/off cooker the switch may flip to "warm" before the grain is done, because that switch is triggered by the pot's temperature rising past 100°C once the free water is gone — not by the rice being cooked. If that happens, leave the lid closed and let it sit on warm for 15 minutes, or add a splash of hot water and run the cycle again.

Fuzzy logic and induction models have a dedicated brown rice program that soaks the grain at a low temperature first and then extends the cook. If you eat brown rice often, that program is the single feature worth paying for.

The finger and knuckle method — when it actually works

Level the rinsed rice, rest your fingertip on the surface, and add water to your first knuckle. It works, but not universally, and it's worth knowing why. The depth of water sitting above the rice is what your knuckle measures — roughly 1.5 cm — and whether that depth delivers the right ratio depends on how wide the pot is and how much rice is in it.

In a standard 5.5-cup cooker the knuckle lands almost exactly right at two to three cooker cups of white rice. Below that, the same 1.5 cm is far too much water for such a thin layer of grain. Past three cups it starts to leave the rice underdone. It is also unreliable for brown rice, which wants a depth of roughly 2.5 to 4 cm depending on batch size. The calculator above shows the actual depth in centimetres and tells you whether the knuckle would land in the right place for what you're cooking.

Fixing rice that came out wrong

  • Mushy or waterlogged — reduce water by 10% next time. Right now, fluff it with a fork, leave the lid off for five minutes and let steam escape.
  • Hard or crunchy in the middle — add 2–3 tablespoons of hot water, close the lid and run another short cycle. Increase by 10% next time.
  • Burnt or crusted base — usually too little water, or a heating plate with residue on it. Wipe the plate and the outside of the inner pot dry before every cook.
  • Wet on top, dry underneath — the rice wasn't levelled before cooking. Spread it flat and don't stir once the cycle starts.
  • Boiling over through the vent — too much surface starch. Rinse more thoroughly, or add a few drops of oil.
  • Always slightly off — old rice loses moisture in storage and needs about 5% more water than fresh crop.

Cooking at altitude

Water boils below 100°C once you climb, so rice cooks more slowly and loses more to steam. Above 3,000 feet add roughly 5% more water, and another 5% for every 3,000 feet after that, expecting a longer cycle. Pressure cookers sidestep the problem almost entirely, which is why they're the practical choice in mountain kitchens.

Let it rest before you open the lid

When the cycle ends the rice is cooked but the moisture is not evenly distributed — the bottom is wetter than the top. Ten minutes on "keep warm" with the lid shut lets it equalise, and it's the difference between good rice and very good rice. Fluff from the bottom up with a paddle, cutting rather than stirring, so you don't crush the grains.

What is the water ratio for a rice cooker?

For white long grain rice, use 1 part rice to about 1.35 parts water by volume. Jasmine needs slightly less at 1:1.25, basmati more at 1:1.5, and brown rice roughly 1:2. Use the same cup for rice and water and the ratio works whatever cup you own.

How much water do I need for 2 cups of rice in a rice cooker?

Two rice cooker cups (360 ml) of white rice need about 485 ml of water. If you measured two US cups (473 ml), you need about 640 ml. Brown rice needs double: 720 ml and 945 ml respectively.

Is a rice cooker cup the same as a measuring cup?

No. A rice cooker cup is 180 ml, a US measuring cup is 236.6 ml and a metric cup is 250 ml. The water lines inside the pot assume the 180 ml cup, so using a US cup with those lines leaves the rice noticeably undercooked.

Why is my rice cooker rice always mushy?

The usual causes are too much water, rice that was rinsed but not drained, or opening the lid mid-cycle. Cut the water by 10%, drain rinsed rice for a full minute, and leave the lid closed until the cycle finishes plus ten minutes of resting.

Do I use less water in a rice cooker than on the stove?

Yes. A rice cooker seals in steam, so almost nothing evaporates. A stovetop pot loses water to the air throughout cooking and needs roughly 15% more. Pressure cookers need less still — around 1:1 for white rice.

How much water for brown rice in a rice cooker?

Use 1 part brown rice to 2 parts water and allow 45 to 60 minutes. Soaking the rice for 30 minutes first improves texture and lets you cut the water back to about 1:1.75.

Does 1 cup of rice really make 3 cups cooked?

Close to it. White long grain roughly triples in volume, short grain expands about 2.6 times and wild rice about 3.5 times. One rice cooker cup of white rice yields roughly 540 ml cooked, which serves two to three people as a side.

Should I add salt or oil to rice cooker rice?

Both are optional and neither changes the water ratio. About ¼ teaspoon of salt per cup of raw rice seasons it from the inside. A few drops of neutral oil reduce foaming and stop starchy water escaping through the vent.
